Do you ever wonder what is on the other side of fear? A common medieval belief held that a sprig of thyme would bestow a spirit of dauntless courage upon knights as they went into battle. If the Knights were right, we suggest that you take some thyme before launching yourself into the unknown. Growing wild on heaths and sunny banks, this popular kitchen herb has a pungent, warm, aromatic flavour and is one of the favourite seasonings in poultry, seafood and vegetable dishes. It complements rice, mushrooms, tomatoes, eggplant, spinach and carrots, and works well in combination with bay leaf and sage in bouquet garni for soups, stocks and stews. Thyme is favoured in slow cooking as it releases its flavour gradually and is added early on in the cooking process.

Thyme is used to treat coughs and improve digestion. The herb is also rich in disease-fighting antioxidants. Volatile oils found in thyme have powerful antimicrobial, anti-fungal and antispasmodic properties. To capture the aromatic edge of thyme, add it to your matzo balls, sprinkle it over za’atar fried chicken, or mix it with your favourite steak rub pepper blend. This fragrant herb will transform a simple dish into a savoury speciality that will tempt the most discerning palate.
